ASM Global aspired to create hot food-to-go destinations as part of a complete entertainment extravaganza.

Leaders in venue and event strategy management, ASM Global, found that serving hot food-to-go in an event setting posed a range of challenges.

Consistent streams of customers, paired with high-paced purchasing peaks, meant a large volume of premium quality food is required throughout their events. These high demands often resulted in poor quality, labour inefficiencies and wasted food.

Flexeserve Solution

ASM Global worked alongside our experts as part of Flexeserve Solution, the hot-holding industry’s first all-encompassing and transformative service. Together, they began to develop a new grab-and-go programme.

This included selecting a key test venue, redeveloping menus, improving packaging and utilising Flexeserve’s hot-holding products to their full potential.

Technology

Given the food volume needs of ASM Global, every kiosk at their first grab-and-go venue, Leeds’ First Direct Arena, would require a Flexeserve Zone Countertop unit in place. Zone’s unique ability to hot-hold at different temperatures in one unit meant it could create the perfect microclimate for every option – unlocking higher food quality and a wider range available to customers.

Food

Alongside ASM’s food team, our culinary experts helped redefine their food menu, developing ten new food concepts to excite their audience and meet ever-changing demands.

This included a redeveloped burger offer, focusing on contemporary trends with two smashed patties, cheese and a glazed bun. A range of open flatbreads were also included on the menu, with three meat options and a vegan alternative. The culinary team’s next exciting addition was loaded tater tots with BBQ beef, drizzled with nacho cheese sauce – just a further example of how extensive and detailed the new menu has become.

Culinary

We worked meticulously to test and create procedures that can deliver the entire new and upgraded menu without the additional complexities within their operation. Our experts developed detailed cook programmes that can be replicated across all of the ASM Global operated stadiums, utilising their existing equipment and labour alongside Flexeserve technology to achieve total operational efficiency.

Our culinary sessions highlighted the need for premium quality offerings that would truly ‘wow’ attendees. No matter if there was a desire for traditional fast-food favourites or more healthier options – every food item would be of the highest possible standard.

Packaging

How each food item is packaged is essential to the hot-holding process. Our specialists tested several packaging options for ASM’s needs, advising on the correct solutions for maximised hold times and quality.

This process is a vital part of what enables Flexeserve’s units to hold food for longer than ever thought possible, ensuring hot food is available before, during and after every event.

Implement

Implementation was then agreed upon, with this new process for true hot-holding able to be replicated throughout any of ASM’s locations.

The central production kitchen would oversee the preparation and cooking of food, with units loaded before and during the event to ensure items were consistently available at optimum freshness and food safety compliance.

Following the implementation process at First Direct Arena, ASM’s new hot-holding programme delivered quick wins.

Behind the scenes, the busy kitchen team found the new process relieved pressures with simple and effective procedures. This also resulted in energy usage and food waste declining significantly – driving an immediate impact on ROI figures.

ASM reported a major uptake in hot food sales at the arena, with improved customer satisfaction highlighted in their feedback.

Following this successful process, ASM has already rolled this programme out to AO Arena in Manchester, Utilita Arena Sheffield and Vaillant Live in Derby, ahead of full implementation across all UK venues.

Contact-free hot food sales

ASM Global are now rolling out contact-free bars and food kiosks at several of their locations.

This highly efficient process is a natural fit for Flexeserve’s hot grab-and-go service. Food can be prepped in advance to meet sales demands and maintain impressive quality for long periods of time.

Guests are then able to serve themselves easily from our units throughout the event, choosing their favourite food-to-go items without a need to queue and pay manually – maximising efficiencies for a friction-free experience.
